Instructions
- Cook rice according to package directions and set aside.
- In a large skillet, heat oil over medium-high heat.
- Add diced chicken and cook until browned and cooked through.
- Remove chicken from skillet and set aside.
- Add diced onion, garlic, and ginger to the skillet and cook until softened.
- Add frozen peas and carrots to the skillet and cook until vegetables are tender.
- Push the vegetables to one side of the skillet and add beaten eggs to the other side.
- Scramble the eggs until cooked through, then mix them in with the vegetables.
- Add the cooked rice and cooked chicken to the skillet and stir to combine.
- Pour soy sauce and sesame oil over the mixture and stir until well combined.
- Cook for an additional 2-3 minutes, stirring occasionally, until heated through.
